The universal grill plate can be used on both sides - when using the ribbed side, the typical diamond pattern can be fried on pieces of meat - small pieces of grill that could otherwise easily fall through the grill grate can be fried with the smooth side e.g. shrimp, burgers, medallions, vegetables
Duck breast or belly meat or other high-fat types of meat can also be grilled with this plate without the fat dripping into the fire - this is drained off in a controlled manner via an opening
